MODEL RELEASED. Cheese manufacture. Man in a production hall with pressed, raw cheeses. The circular moulds used to shape the cheeses are on the floor behind the man. Cheese is made by separating the solid part of milk, or curd, from the liquid part, or whey. Bacteria and enzymes are used to curdle the milk. The curd is then drained and placed in a mould. Curd intended for use in hard cheese is kept in the mould longer than that used for soft cheese. If hard cheese is being made then the curd in the mould is also pressed to force out more of the whey. After this the curd is taken to a cool room to mature into the final product.
