Les Halles at night. At a fruit wholesaler's men are working inside the tidy storehouse containing hundreds of neatly stacked boxes and where the produce is on display for buyers to come and see. The central food market of Les Halles was a sprawling area, known as the Quartier des Halles, with covered streets and through roads linking the pavilions, wholesale stores in side streets away from the pavilions, and a chaos of stalls, wholesale produce dealers and retailers, filling roads and narrow streets at night known as the carreau forain that had to be cleared by the time the ordinary working day was about to begin.
